Turkey with Walnut-Cranberry Stuffing

  • 9-15 Kg turkey


  • 500 g sausage meat, casing removed
  • 500 g finely chopped onion
  • 500 g finely chopped celery
  • 250 g finely chopped mushrooms
  • 250 g dried cranberries
  • 150 g walnut pieces
  • 5 ml(s) ground sage
  • 5 ml(s) poultry seasoning
  • 1 baguette, cubed
  • 5 ml(s) salt and pepper to taste
  • 500 ml(s) chicken stock
  • 6 slices bacon

Cooking Instructions

Place the bread cubes in a large bowl. Sauté the sausage meat with the giblets. The meat should be broken into small pieces. When cooked, add to the bread cubes.

Caramelize the onions and celery and add to the mixture.

Add the cranberries and walnuts.

Add the herbs and spices and stir well to combine.

Remove the neck and organs from the cavity and stuff the turkey.

Place in a roasting pan with a rack if possible, and arrange bacon slices on the turkey.

Add chicken stock to the pan and cover with foil.

Roast in the oven at 300°F, about 1 hour per kilo.
