Spicy Chicken Breast

Ingredients

Marinade

  • 1 large clove garlic
  • 2 tbsp(s) lemon juice
  • 4 tbsp(s) extra virgin olive oil
  • 1/2 tsp(s) paprika
  • 1 tsp(s) coarse salt
  • 1/2 tsp(s) ground cumin
  • 3 Thai or habanero peppers

Chicken

  • 4 boneless chicken breasts

Cooking Instructions

Purée the peppers, garlic and lemon juice. Add the oil, paprika and cumin and mix well. Baste the chicken breasts with the marinade and refrigerate for at least 30 minutes. Bake at 400°F, turning the chicken every 15 minutes. Serve with a salad or with quinoa.
