Jewish Shortbread

Ingredients

  • 1 cup butter (room temperature) - never use margarine!
  • 1/3 cup white sugar
  • 1 tsp. vanilla
  • 1/2 cup finely ground pecans
  • 1 2/3 cups flour
  • Pinch of salt
  • 1/2 cup sugar
  • 4 tsp. cinnamon

Cooking Instructions

Cream together butter and sugar. Add vanilla, nuts, flour and salt and beat well. Shape into crescents and place 1" apart on an ungreased cookie sheet. Bake at 325 degrees F for 15-20 minutes. Mix remaining sugar and cinnamon together. While still warm, roll cookies in cinnamon sugar mixture. Cool.

Makes 2-3 dozen cookies.
