Crepes with Pears and Chocolate

Crepe Batter

  • 4 eggs
  • 2 cup(s) milk
  • 1 cup(s) flour
  • 1/3 cup(s) melted butter
  • 1 tsp(s) salt
  • 1 tbsp(s) sugar
  • 1 tsp(s) vanilla extract

Pear-Chocolate Filling

  • 4 pears
  • 7 once(s) dark chocolate shavings
  • 1/2 cup(s) butter
  • 1 tsp(s) vanilla extract

Cooking Instructions

For the batter: Melt the butter and let cool. Combine the eggs and the flour. Stir in the milk. Add the salt, sugar and melted butter. Add the vanilla. Stir or pour through a strainer to obtain a smooth batter.

For the filling: Slice the pears and poach in the butter and a little water. Add the vanilla extract (and a little brandy or rum, if desired). Fill the crepes with the pear mixture and top with chocolate shavings.
